Honey is floral nectar that worker bees repeatedly swallow, regurgitate and fan with their wings until its water content drops enough to resist spoilage. It is stored in wax comb to feed the colony through winter and early spring. From a vegan perspective the product itself is an animal secretion, and its harvest necessarily manipulates the hive: frames are removed, bees are smoked, queens are often clipped or caged to prevent swarming, and colonies are routinely killed after the season in intensive operations. Large-scale beekeeping also displaces wild pollinators and ships bees thousands of kilometres for crop pollination, contributing to disease spread. Nutritionally honey is roughly 80% sugar with trace enzymes and pollen; it has no unique nutrient that cannot be obtained from plants. The environmental argument for local honey is weaker than it appears: managed honeybees are not the most efficient pollinators for most ecosystems, and high densities can outcompete native solitary bees and bumblebees. For cooking, honey's functional traits are high fructose (which keeps baked goods moist), viscosity and a floral aroma. Date syrup gives a similar moisture and caramel note; agave matches the pour and sweetness; maple provides comparable viscosity with a different flavour; and barley malt or brown rice syrup add the deep colour and malt note that honey contributes to marinades and barbecue sauces.
