Why
Dried semolina pasta contains only durum wheat and water and is vegan. Fresh pasta, egg tagliatelle and most filled pasta (ravioli, tortellini) use eggs, and fillings commonly include ricotta, parmesan or meat.

Italian food law helps here: pasta secca sold as 'pasta di semola di grano duro' may legally contain only durum semolina and water, which is why the dried aisle is almost entirely vegan. Egg enters with pasta all'uovo, the northern tradition, where roughly one egg per 100 g of soft wheat flour gives the fat and protein that makes sheets elastic enough to roll thin for lasagne and tagliatelle. Filled shapes double the risk since ricotta, parmesan, mascarpone and prosciutto are the standard fillings, and even 'spinach and ricotta' listed as vegetarian is not vegan. Two smaller traps: squid ink for nero pasta, and a handful of fresh-pasta brands that brush sheets with egg wash. Bronze-die dried pasta is the vegan cook's best friend because its rough surface holds sauce better, compensating for the absence of butter or cheese emulsions.
