What is actually in it

Hummus bi tahini is chickpeas blended with sesame paste, lemon juice, garlic and salt, finished with olive oil. Nutritionally it pairs legume and seed proteins, which together cover the amino acids each lacks, and a 100 g serving gives roughly 8 g protein, 6 g fibre and a good dose of iron, folate and copper. The texture argument matters for authenticity and for vegan status: traditional recipes get smoothness from over-cooking the chickpeas with a pinch of bicarbonate of soda and from generous tahini, while industrial 'light' recipes cut the tahini and oil and compensate with dairy, starch or emulsifiers. That is why the reduced-fat tub is the one to read. Flavoured tubs add their own risks — caramelised onion versions sometimes use honey, and dessert-style chocolate hummus can contain milk chocolate. Toppings sold on the surface (feta, pine nuts in butter, spiced lamb) are the clearest non-vegan case and are usually visible.

Is tahini the same as sesame paste?

Tahini is hulled, lightly toasted sesame ground to a pourable paste; Chinese sesame paste uses darker-roasted unhulled seeds and tastes much stronger, so it is not a straight swap.

How do I make hummus as smooth as a restaurant?

Simmer dried chickpeas with half a teaspoon of bicarbonate of soda until the skins slip, then blend hot with ice-cold lemon juice and at least 120 g of tahini per 400 g of cooked chickpeas.

Is hummus a complete protein?

Chickpeas are low in methionine and sesame is low in lysine, so together they complement each other. Complete-protein-per-meal thinking is outdated anyway; variety across the day is what counts.
