Por qué

What is actually in it

Fries pass through two fat baths. At the factory the cut potato is blanched and par-fried, which sets the crust and lets it freeze without going grey; at the restaurant it is finished in the fryer. Either stage can introduce animal products. Historically most large chains par-fried and finished in beef tallow because saturated animal fat gives a firmer crust and a distinctive flavour; the switch to vegetable oil in 1990 left some brands adding a flavouring back in to compensate, which is where the notorious 'natural beef flavour' with hydrolysed milk and wheat comes from. Coatings are the second trap: many frozen fries are dusted with a dextrin or rice-flour batter for crispness, and a minority include whey or lactose for browning. Third is cross-contact — one fryer shared with breaded fish, chicken or mozzarella sticks. None of those are visible on a menu, so the reliable move is to check the chain's published allergen and ingredient sheet for the specific country you are in, since recipes are formulated per market.
