What is actually in it
Real guacamole is a Nahuatl dish — āhuacamolli, avocado sauce — and it needs nothing but ripe avocado, lime, salt and aromatics. The commercial versions drift because avocado is the expensive ingredient: manufacturers stretch it with water, starch, oil and sometimes dairy proteins, which also stabilise the colour and mouthfeel. That is why avocado percentage on the pack is a better vegan and quality signal than the front label. Browning is the other reason additives appear: cut avocado oxidises through polyphenol oxidase, and while high-pressure processing solves it industrially, home cooks get the same effect with acid and minimal air contact — press cling film directly onto the surface rather than leaving the stone in, which is a myth that only protects the flesh it touches. Nutritionally guacamole is a rare dip that earns its calories: mostly monounsaturated fat, around 7 g fibre per 100 g, plus potassium, folate and vitamin E. The genuine ethical question with avocados is not animal use but water demand and land pressure in Michoacán and Petorca, which is worth weighing if you eat them daily.
